Ingredients

  • 12 slices P’tit Quebec Brick Cheese Slices
  • 3 tbsp (45 mL) mayonnaise
  • 1 1/2 tbsp (22 mL) jerk marinade
  • 2 tsp (10 mL) lime juice
  • 1 cup (250 mL) shredded rotisserie chicken
  • 2 green onions, finely chopped
  • 8 slices sourdough bread
  • 1/2 cup (125 mL) sliced roasted red peppers
  • 1 mango, peeled and thinly sliced
  • 2 tbsp (30 mL) butter, at room temperature

Instructions

  1. In small bowl, stir together mayonnaise, jerk marinade and lime juice; toss chicken with jerk mixture and green onions. Set aside.
  2. Layer each of 4 bread slices with 1 P’tit Quebec cheese slice, red pepper slices, mango slices, another cheese slice, jerk chicken mixture and another cheese slice. Cap with remaining bread. Spread butter over outer sides of bread.
  3. Heat large skillet over medium-low heat. In batches, cook sandwiches, pressing lightly, for 4 to 5 minutes per side or until bread is golden brown and cheese is melted.
  4. Cut grilled cheese in half to serve.

Tip: Serve sandwiches with a side of coleslaw if desired.
